Fruit Salad with Honey-Lime Dressing

This recipe makes a ton, I make this for our lake trips and still come home with plenty. So if you aren’t feeding a small army then you may want to half the recipe. I usually make a whole batch and take some with me to work everyday for a snack. You can also use whatever fruit you like the most. I always use green grapes and strawberries and change-up the third fruit. Sometimes I will have four different fruits in it. The options are endless. I have used blackberries, raspberries, pineapples and even bananas. It all comes down to consistency though, blackberries and raspberries just get too mushy in the dressing.

1 pt. container strawberries
1 pt. container blueberries
1  bunch (about 1 1/2 lbs.) seedless grapes (green, red or a mixture of both)
1/4 cup honey
juice from 2 limes (about 2-3 tablespoons)

Rinse strawberries, blueberries and grapes.  

Gently pat dry the fruit.  Remove the stems from the strawberries, then cut each in half; if large, cut into quarters.

Remove stems from blueberries.

Remove grapes from stems.

Gently combine all three in a large bowl or aluminum tray.  Set aside.

In a small bowl, whisk together honey and lime juice.  Pour over fruit.  

 

*This tastes even better if you make this the night before and let all the flavors and juices mix in overnight.
